I've used httptoolkit before when investigating mobile applications, it's really shit in comparison to other proxy apps. I think burpsuite is much better in terms of functionality and features. it's not as easy to setup with an emulator, but very worth while.

Mobile Client Rest API's are often a good attack vector because developers often allow mobile client connections to go through fewer server side security checks.
