Get a D-Link D-Link DIR-860L B1 and put OpenWRT on it if you want a router you can sleep at night with. If you want even more control then Opnsense and pfsense on a X86 machine with multiple ethernet cards is the way to go.

I have an ASUS RT-AX88U for my non-blackhat internet connection; it is a little pricier but you get what you pay for with these.

+1, even my grandmother could flash OpenWrt. With fully compatible devices it's literally plug-and-play.

TP-Link Archer AX6000 or Netgear Nighthawk AX12—both offer great fiber support, speed, and reasonable pricing.

If you or someone else is looking, you can get a cheap MikroTik hEX S (If you're only looking for a Router/Gateway with no WiFi).

hEX S - RB760iGS

Can do 1Gbps with FastTrack enabled. You can also flash OpenWRT on it like joepa mentioned above. MikroTik does have a learning curve on how to use it but default factory settings can get you started and plenty of tutorials on how to enable FastTrack.
