That's a pretty cool compact guide on OPSEC! What country in your opinion provides a good jurisdiction and would you recommend for a VPN? I used Mullvad VPN and I can say that it's very good but can we really trust it?

Disclaimer: I'm not the OP. To answer your question, areas with strong privacy laws (like Switzerland) are good places to choose for a VPN. As for Mullvad, it's pretty good imo, but what should help improve your anonymity (assuming you don't trust it) is to pay in an untraceable method (cash or monero). That way, even if hypothetically Mullvad's payment system is compromised, whoever's after you won't know who you are without more info.
