Veilid Chat might be something to look into. Veilid is the new anonymous network by Cult of the Dead Cow. It's still relatively new, but is supposed to combine the good parts of tor, i2p, and similar projects while fixing the flaws. Veilid chat is supposed to work similar to signal, but its p2p so no central server. The Veilid network and the end to end encryption should provide a reasonable level of security. Signal also works, but is not p2p, though previous subpoenas show that the only data they have access to is the date accounts were created. They have even provided these timestamps in unix time in the past just to mess with law enforcement.
