I really enjoyed Kanata no Astra. Space anime, with an interesting twist (they moved from Earth to "Astra") and faked history.

Would Terraformars count? It's about humans trying to terraform Mars and ending up fighting roided out roaches.

Cowboy Bebop (and similar anime like Outlaw Star) also kind of fit the bill. Most anime with other worlds are isekai rather than space exploration though, and most space anime focus more on action than on just seeing what's out there.
