Vim, less and grep for me. I'm simple.

Large text viewer on Microsoft Store. Takes like 3 min to load a 10GB file and like 5 sec to find a specific text once it's all loaded.

EmEditor is THE best that I've used.

It can handle any size of files. I have even opened 700GBs worth of sql files in it.

Make sure you have a decent PC and use the hard drive which has highest free space since it uses that to store temp file(hence it can open any file size).
