Would highly recommend Spongebob Squarepants: Battle for Bikini Bottom. Was one of my all time favs as a kid on Gamecube, and now it's on everything with a remake called rehydrated.

Subnautica is fantastic
Tbh i been playing alot of nintendo switch games, specially thru emulation, nintendo quality control is really good so
most of the stuff you find will prob have a really high level of game design and everything. Just use ryujinx on your pc and you can run almost everything with medium specs
